- 1 cup chia seeds
- 4 cups coconut milk
- 1/2 cup honey or maple syrup
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup shredded coconut
Instructions
- In a large bowl, mix together the chia seeds, coconut milk, honey or maple syrup, lime juice, lime zest, vanilla extract, and salt.
- Stir well to combine and let sit for about 5 minutes.
- Stir again to prevent clumping of chia seeds.
- Pour the mixture into a greased baking dish and spread evenly.
- Sprinkle shredded coconut on top and refrigerate for at least 2 hours until set.
- Once set, cut into bars and serve chilled.
Notes
- For an extra tropical twist, consider adding mango or pineapple chunks.
- Store in an airtight container in the refrigerator for up to 5 days.
