Ingredients

  • 1 cup chia seeds
  • 4 cups coconut milk
  • 1/2 cup honey or maple syrup
  • 1/4 cup lime juice

  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut

Instructions

  1. In a large bowl, mix together the chia seeds, coconut milk, honey or maple syrup, lime juice, lime zest, vanilla extract, and salt.
  2. Stir well to combine and let sit for about 5 minutes.
  3. Stir again to prevent clumping of chia seeds.
  4. Pour the mixture into a greased baking dish and spread evenly.
  5. Sprinkle shredded coconut on top and refrigerate for at least 2 hours until set.
  6. Once set, cut into bars and serve chilled.
