- 2 rabbit loins
- 1/4 cup tallow
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the tallow over medium heat until melted.
- Season the rabbit loins with salt and pepper, then sear them in the skillet for 3-4 minutes on each side.
- Transfer the skillet to the oven and roast the rabbit loins for 10-15 minutes, or until cooked through.
- Remove from the oven, let rest, and then slice.
- In the same skillet, add the heavy cream and thyme, stir to combine, and simmer until thickened.
- Drizzle the creamy tallow reduction over the sliced rabbit loins and serve immediately.
