Ingredients
Scale
- 1 medium red onion, finely sliced
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons honey
- 1 tablespoon sea salt
- 1 teaspoon whole black peppercorns
- 1 teaspoon coriander seeds (optional)
- 1 sprig of fresh thyme (optional)
Instructions
- In a small saucepan, mix together the white vinegar, water, honey, sea salt, black peppercorns, coriander seeds, and fresh thyme.
- Heat the mixture over medium heat, stirring occasionally until the honey and salt are fully dissolved.
- Transfer the sliced red onion into a clean glass jar or bowl.
- Carefully pour the hot vinegar mixture over the onions, making sure they are completely covered.
- Use a spoon to gently press the onions down if necessary.
- Let the jar sit at room temperature until it cools down, then seal it and place it in the refrigerator for at least 30 minutes before enjoying.
- For a richer flavor, allow the onions to marinate for a few hours or overnight.
Notes
- These tangy marinated red onions can be kept in the fridge for up to 2 weeks.
- For an extra kick, consider adding a few slices of fresh chili or a dash of your favorite hot sauce to the pickling liquid.
- You can also try using different vinegars, such as apple cider or balsamic, for a distinct flavor profile.
