Deliciously moist and fudge-like brownies made with pumpkin puree and rich chocolate.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, mix together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before cutting into squares.

Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
