Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter (for glaze)
  • 1/2 cup powdered sugar (for glaze)
  • 1/4 teaspoon sea salt (for glaze)
  • 1-2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the bread is baking, prepare the salted brown butter glaze by melting the butter in a small saucepan over medium heat. Cook until golden brown and nutty in aroma, then remove from heat and let cool slightly.
  7. In a bowl, whisk together the brown butter, powdered sugar, sea salt, and enough milk to reach your desired glaze consistency.
  8. Once the bread is done baking, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Drizzle the salted brown butter glaze over the cooled pumpkin bread.
