Delicious autumn spice pumpkin bars topped with creamy cream cheese frosting.

  • Total Time: 50 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (15 ounces) pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing and lightly dusting it with flour.
  2. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt, whisking them together until well mixed.
  3. In a large mixing bowl, blend the granulated sugar, brown sugar, and vegetable oil until the mixture is smooth and creamy.
  4. Incorporate the eggs, pumpkin puree, and vanilla extract into the sugar mixture, beating until fully combined and velvety.
  5. Slowly fold in the dry ingredients, mixing gently until just combined to avoid overworking the batter.
  6. Transfer the batter into the prepared baking dish, smoothing the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the squares cool completely in the pan on a wire rack.
  9. Prepare the creamy frosting by beating together the softened cream cheese and butter until light and fluffy.
  10. Gradually add the powdered sugar and vanilla extract, mixing until smooth; adjust the consistency with milk as needed.
  11. Once the pumpkin squares are fully cooled, generously spread the creamy frosting over the top.
  12. Cut into squares and enjoy!

Notes

  • For an extra crunch, consider folding in 1 cup of chopped nuts or chocolate chips into the batter before baking.
  • Swap half of the all-purpose flour with whole wheat flour for a more nutritious twist.
