A classic Swedish dessert, Princess Cake is a delicious multi-layered cake with a rich filling and a distinctive green marzipan coating.

Ingredients

  • 4 cups cake flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter
  • 4 eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups raspberry jam
  • 2 cups whipped cream
  • 1 pound marzipan
  • green food coloring (as needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare cake pans.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. Sift together the flour and baking powder, then add to the creamed mixture alternately with milk.
  5. Stir in the vanilla.
  6. Divide the batter between the prepared pans and bake for 25-30 minutes.
  7. Cool the cakes in the pans then turn out onto wire racks.
  8. Once cool, slice each cake in half horizontally, creating four layers.
  9. Spread raspberry jam between the layers, followed by whipped cream.
  10. Stack the layers and cover the entire cake in whipped cream.
  11. Roll out the marzipan with green food coloring and place over the cake smooth it down.
  12. Decorate as desired before serving.

Notes

  • For a fancier presentation, consider adding fresh fruits or edible flowers as decoration.
  • Make sure the cake is fully cooled before covering it with marzipan.
