Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix shredded coconut, sugar, coconut milk, eggs, and vanilla extract.
- In another bowl, combine flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until well combined.
- Pour the batter into a greased baking pan.
- Bake for 25–30 minutes or until golden and a toothpick comes out clean.
- Let it cool before serving.
Notes
- For a richer flavor, you can add a pinch of salt to the batter.
- These cakes can be stored in an airtight container for up to a week.
