Ingredients

  • 2 pounds pork ribs
  • 1 cup onions, diced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 4 cups chicken stock
  • 1 cup red lentils
  • 1 cup coconut milk
  • 1/4 cup cilantro, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat and sauté the onions until translucent.
  2. Add garlic, ginger, and spices; cook until fragrant.
  3. Add pork ribs and sear on all sides.
  4. Pour in chicken stock and bring to a simmer.
  5. Add red lentils and coconut milk; cook until lentils are tender and pork is cooked through.
  6. Stir in cilantro before serving.
