- 2 pounds pork ribs
- 1 cup onions, diced
- 2 garlic cloves, minced

- 2 teaspoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 4 cups chicken stock
- 1 cup red lentils
- 1 cup coconut milk
- 1/4 cup cilantro, chopped
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat oil over medium heat and sauté the onions until translucent.
- Add garlic, ginger, and spices; cook until fragrant.
- Add pork ribs and sear on all sides.
- Pour in chicken stock and bring to a simmer.
- Add red lentils and coconut milk; cook until lentils are tender and pork is cooked through.
- Stir in cilantro before serving.
Notes
- Serve with rice or naan for a complete meal.
- For a thicker stew, reduce the amount of liquid.
