A flavorful Vietnamese noodle soup featuring tender pork belly and aromatic herbs.

Ingredients

  • 1 pound pork belly
  • 8 cups beef broth
  • 2 star anise
  • 1 cinnamon stick
  • 4 green onions, chopped
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 8 ounces rice noodles
  • 1 cup bean sprouts
  • 1/2 cup fresh basil leaves
  • 1/2 cup cilantro leaves
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, add pork belly and cover with beef broth. Bring to a simmer and cook for 1.5 hours.
  2. Add star anise, cinnamon stick, green onions, onion, garlic, and ginger. Simmer for an additional 30 minutes.
  3. Remove pork belly, let cool, and slice thinly.
  4. Cook rice noodles according to package instructions. Drain and divide among bowls.
  5. Pour the hot broth over the noodles and top with sliced pork belly.
  6. Garnish with bean sprouts, basil, cilantro, and lime wedges.

Notes

  • For a richer flavor, use homemade beef broth.
  • Adjust the amount of chili for spiciness according to your taste.
