- 1 pound pork belly
- 8 cups beef broth
- 2 star anise
- 1 cinnamon stick
- 4 green onions, chopped
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 8 ounces rice noodles
- 1 cup bean sprouts
- 1/2 cup fresh basil leaves
- 1/2 cup cilantro leaves
- 1 lime, cut into wedges
Instructions
- In a large pot, add pork belly and cover with beef broth. Bring to a simmer and cook for 1.5 hours.
- Add star anise, cinnamon stick, green onions, onion, garlic, and ginger. Simmer for an additional 30 minutes.
- Remove pork belly, let cool, and slice thinly.
- Cook rice noodles according to package instructions. Drain and divide among bowls.
- Pour the hot broth over the noodles and top with sliced pork belly.
- Garnish with bean sprouts, basil, cilantro, and lime wedges.
Notes
- For a richer flavor, use homemade beef broth.
- Adjust the amount of chili for spiciness according to your taste.
