- 1 cup pistachios, shelled
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup espresso, cooled
- 1 package ladyfingers
- 1/4 cup cocoa powder
Instructions
- In a food processor, blend pistachios until finely ground.
- In a bowl, mix mascarpone, heavy cream, sugar, vanilla, and ground pistachios until smooth.
- Dip ladyfingers in espresso briefly and arrange them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add another layer of dipped ladyfingers and top with remaining mascarpone mixture.
- Refrigerate for at least 4 hours before serving.
- Sift cocoa powder over the top before serving.
Notes
- For a stronger pistachio flavor, use pistachio extract in place of vanilla.
- Can be made a day ahead for better flavor.
