- 1 cup pistachios, shelled
- 1 cup raspberries, fresh or frozen
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix the pistachios, oats, raspberries, and salt.
- In another bowl, combine almond butter, honey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- Feel free to add chocolate chips for extra flavor!
