Delicious and nutritious pistachio raspberry energy bars perfect for a quick snack or a post-workout boost.

Ingredients

  • 1 cup pistachios, shelled
  • 1 cup raspberries, fresh or frozen
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix the pistachios, oats, raspberries, and salt.
  3. In another bowl, combine almond butter, honey, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Bake for 20-25 minutes or until golden brown.
  7. Allow to cool completely before cutting into bars.
