Delicious and flaky croissants filled with a rich pistachio cream.

Ingredients

  • 1 package puff pastry
  • 1 cup pistachios, shelled
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut into triangles.
  3. Blend the pistachios, powdered sugar, heavy cream, and vanilla extract until smooth.
  4. Place a spoonful of the pistachio mixture on each triangle.
  5. Roll the pastry from the wide end to the tip and place on a baking sheet.
  6. Brush with beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool before serving.

Notes

  • Can be made a day in advance and stored in an airtight container.
  • For added flavor, consider adding a pinch of salt to the pistachio mixture.
