A delicious Peruvian dish featuring tender stir-fried beef paired with crispy fried potatoes, bursting with flavor.

Ingredients

  • 1 pound beef sirloin, cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and sliced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, marinate the beef strips with soy sauce, vinegar, cumin, salt, and pepper for at least 30 minutes.
  2. Heat vegetable oil in a pan over medium heat, add the marinated beef, and stir-fry until browned. Remove and set aside.
  3. In the same pan, add onions, bell peppers, and garlic. Sauté until softened.
  4. Add the beef back to the pan, stir well to combine, and cook for a few more minutes.
  5. Meanwhile, heat oil in another pan and fry the potato slices until golden and crispy. Drain on paper towels.
  6. Serve the beef stir-fry with the crispy fried potatoes on the side.

Notes

  • For added flavor, consider serving with aji sauce.
