A refreshing twist on traditional fritters, these Pea, Zucchini & Mint Fritters are perfect for a light meal or snack.

Ingredients

  • 1 cup frozen peas, thawed
  • 1 medium zucchini, grated
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine the thawed peas, grated zucchini, and chopped mint leaves. Mix well.
  2. In a separate bowl, whisk together the eggs, then add the flour, Parmesan cheese, baking powder, garlic powder, salt, and pepper. Stir until just combined.
  3. Fold the vegetable mixture into the egg mixture until evenly incorporated.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Once the oil is hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of the spoon.
  6. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve warm, garnished with extra mint if desired.

Notes

  • For a gluten-free option, substitute all-purpose flour with almond flour or a gluten-free flour blend.
  • Add crumbled feta cheese for a tangy flavor or diced bell peppers for extra crunch.
