Instructions
- In a large mixing bowl, combine the thawed peas, grated zucchini, and chopped mint leaves. Mix well.
- In a separate bowl, whisk together the eggs, then add the flour, Parmesan cheese, baking powder, garlic powder, salt, and pepper. Stir until just combined.
- Fold the vegetable mixture into the egg mixture until evenly incorporated.
- Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm, garnished with extra mint if desired.
