  • 1 cup unsalted butter
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 6 large eggs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup passionfruit puree (fresh or canned)
  • Zest of 1 lime
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine the water, butter, and salt, bringing it to a rolling boil.
  3. Once boiling, remove the pan from heat and add the flour all at once, stirring vigorously until the dough forms a cohesive ball.
  4. Allow the dough to cool for about 5 minutes before incorporating the eggs one by one, mixing until smooth.
  5. Using a piping bag fitted with a large round tip, pipe 1.5-inch circles onto the prepared baking sheet, leaving space between each.
  6. Bake for 25-30 minutes until puffed and golden brown, avoiding opening the oven door during baking.
  7. While the puffs cool, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Gently fold in the passionfruit puree and lime zest to create the filling.
  9. Once cooled, slice the puffs in half horizontally and fill the bottom halves with the passionfruit cream.
  10. Stack two filled puffs on top of each other for each serving and garnish with fresh mint leaves if desired.
