- 2 cups butternut squash, peeled and diced

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the diced butternut squash with olive oil, garlic powder, salt, pepper, and nutmeg.
- Spread the butternut squash mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, until tender.
- Remove from the oven and sprinkle with Parmesan cheese.
- Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and golden brown.
- Serve warm.
Notes
- For a twist, add some crushed red pepper flakes for a spicy kick.
