  • 2 cups butternut squash, peeled and diced
  • 1 cup Parmesan cheese, grated

  • 1 teaspoon garlic powder

  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the diced butternut squash with olive oil, garlic powder, salt, pepper, and nutmeg.
  3. Spread the butternut squash mixture on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, until tender.
  5. Remove from the oven and sprinkle with Parmesan cheese.
  6. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and golden brown.
  7. Serve warm.
