  • 4 cups fresh broccoli, chopped
  • 1 cup carrot, shredded
  • 1/2 cup onion, chopped
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups vegetable broth
  • 2 cups half-and-half
  • 3 cups shredded cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrot, and broccoli; sauté until softened.
  2. Stir in the flour and cook for 1–2 minutes.
  3. Gradually add the vegetable broth, stirring constantly until thickened.
  4. Reduce heat and stir in the half-and-half and cheese, mixing until melted and smooth.
  5. Season with salt and pepper. Serve warm.

Notes
