- 4 cups fresh broccoli, chopped
- 1 cup carrot, shredded
- 1/2 cup onion, chopped
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups vegetable broth
- 2 cups half-and-half
- 3 cups shredded cheddar cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrot, and broccoli; sauté until softened.
- Stir in the flour and cook for 1–2 minutes.
- Gradually add the vegetable broth, stirring constantly until thickened.
- Reduce heat and stir in the half-and-half and cheese, mixing until melted and smooth.
- Season with salt and pepper. Serve warm.
Notes
- This soup can be made ahead of time and reheats well.
- For a richer flavor, use sharp cheddar cheese.
