Ingredients

- 2 cups coconut milk
- 1 cup heavy cream
- 3/4 cup sugar
- 2 teaspoons pandan extract
- 3 teaspoons gelatin powder
- 1/4 cup water
- pinch salt
Instructions
- In a saucepan, combine coconut milk, heavy cream, and sugar. Heat until sugar is dissolved.
- Add pandan extract and salt, stirring well.
- In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes.
- Add the bloomed gelatin to the warm coconut mixture, mixing until fully dissolved.
- Pour the mixture into molds and refrigerate for at least 4 hours until set.
- To serve, gently unmold and enjoy.
Notes
- For a stronger pandan flavor, increase the pandan extract.
- Can be served with fresh fruit or a drizzle of coconut cream.
