A deliciously creamy dessert infused with pandan and coconut flavors.

Ingredients

  • 2 cups coconut milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 2 teaspoons pandan extract
  • 3 teaspoons gelatin powder
  • 1/4 cup water
  • pinch salt

Instructions

  1. In a saucepan, combine coconut milk, heavy cream, and sugar. Heat until sugar is dissolved.
  2. Add pandan extract and salt, stirring well.
  3. In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes.
  4. Add the bloomed gelatin to the warm coconut mixture, mixing until fully dissolved.
  5. Pour the mixture into molds and refrigerate for at least 4 hours until set.
  6. To serve, gently unmold and enjoy.

Notes

  • For a stronger pandan flavor, increase the pandan extract.
  • Can be served with fresh fruit or a drizzle of coconut cream.
