- 1/2 cup duck fat
- 2 cloves garlic, minced

Instructions
- Heat the duck fat in a skillet over medium-high heat.
- Pat the scallops dry and season with salt and black pepper.
- Once the fat is hot, add the scallops, making sure not to overcrowd the pan.
- Sear scallops for about 2-3 minutes on each side, until golden brown.
- Add minced garlic and thyme during the last minute of cooking.
- Remove scallops and serve immediately.
Notes
- Ensure the scallops are dry before cooking for the best sear.
- Duck fat can be substituted with butter if preferred.
- Serve with a wedge of lemon for added flavor.
