Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, warm the milk over medium heat, then gradually whisk in the semolina, stirring continuously to avoid lumps. Cook for about 5 minutes until the mixture thickens, then set aside to cool slightly.
  3. In a separate bowl, whisk together the sugar, melted butter, eggs, baking powder, salt, and orange blossom water until smooth.
  4. Carefully incorporate the cooled semolina mixture into the egg mixture until fully blended.
  5. Pour the batter into the prepared cake pan, smoothing the surface.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. While the cake cools, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Once the cake has cooled, cut it into cubes.
  10. In a large trifle dish or individual glasses, alternate layers of cake cubes, orange segments, and whipped cream.
  11. Repeat the layering process until the dish is filled, ending with a generous layer of whipped cream.
  12. Top with chopped pistachios and fresh mint leaves for garnish.
  13. Chill in the refrigerator for at least an hour before serving to enhance the flavors.
