A flavorful dish featuring tuna steaks braised with onions and spices, inspired by Martín Berasategui.

  • Total Time: 30 minutes
  • Yield: Serves 2

Ingredients

Scale
  • 2 (6-ounce) tuna steaks
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup white wine
  • 1 cup vegetable broth
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and caramelized, about 10-12 minutes.
  2. Add the minced garlic, smoked paprika, salt, and black pepper to the skillet. Cook for an additional 2 minutes until fragrant.
  3. Push the onion mixture to the side of the skillet and add the tuna steaks. Sear the tuna for about 2 minutes on each side until browned.
  4. Pour in the white wine and vegetable broth, bringing the mixture to a simmer. Cover the skillet and let it cook for 5-7 minutes, or until the tuna is cooked to your desired doneness.
  5. Remove the skillet from heat and let it rest for a couple of minutes. Serve the tuna topped with the onion mixture and garnish with fresh parsley and lemon wedges.

Notes

  • For a spicier kick, add a pinch of red pepper flakes when cooking the onions.
  • Substitute the tuna with salmon or swordfish for a different flavor profile. Adjust cooking times as necessary based on the thickness of the fish.
