  • 1 cup granulated sugar
  • 1/2 cup extra virgin olive oil
  • 1 cup yogurt
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 tablespoon orange zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and add the yogurt, olive oil, vanilla, and citrus zests. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients and mix until combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Allow the cake to cool before glazing.
  7. For the glaze, combine powdered sugar with citrus juice to desired consistency.
  8. Spread the glaze over the cooled cake before serving.
