This delicious carrot cake is naturally sweetened and gluten-free.

Ingredients

  • 2 cups grated carrots
  • 1 cup unsweetened applesauce
  • 4 large eggs
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots and applesauce.
  3. Add the eggs and mix until well combined.
  4. In another bowl, combine almond flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually mix the dry ingredients into the wet mixture.
  6. Fold in chopped walnuts.
  7. Pour the batter into a greased cake pan.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
