- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar, divided
- 4 (8 ounce) packages cream cheese, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup sour cream
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and lemon juice.
- Pour the cheesecake filling into the crust and smooth the top.
- Bake for about 1 hour, or until the center is set.
- Remove from oven and allow to cool before refrigerating for at least 4 hours.
- Top with sour cream and refrigerate until ready to serve.
Notes
- For best results, use room temperature cream cheese.
- Let the cheesecake chill overnight for improved flavor.
