Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 4 (8 ounce) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and lemon juice.
  6. Pour the cheesecake filling into the crust and smooth the top.
  7. Bake for about 1 hour, or until the center is set.
  8. Remove from oven and allow to cool before refrigerating for at least 4 hours.
  9. Top with sour cream and refrigerate until ready to serve.
