  • 1 cup champagne

  • 1/2 teaspoon baking soda

  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 1/4 cup champagne (for frosting)
  • 1/2 cup unsalted butter (for frosting, softened)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. Add the champagne, butter, eggs, and vanilla to the dry ingredients and mix until well blended.
  4. Divide the batter evenly between the prepared cake pans and smooth the tops.
  5. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. For the frosting, beat together the butter and powdered sugar until creamy, then add the champagne and mix until smooth.
  8. Once the cakes are completely cool, spread frosting between the layers and over the top and sides of the cake.
  9. Decorate with additional champagne or edible glitter, if desired.
