- 1 leg of lamb (5-7 pounds)
- 4 cloves garlic, minced
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 1 tablespoon ground cinnamon
- 1 tablespoon smoked paprika
- 1 tablespoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix garlic, cumin, coriander, cinnamon, paprika, cayenne, salt, pepper, olive oil, and lemon juice to form a marinade.
- Rub the marinade all over the leg of lamb, covering it completely. Let it marinate for at least 2 hours or overnight for best flavor.
- Place the lamb in a roasting pan and cover it with aluminum foil.
- Roast in the preheated oven for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium rare.
- Let it rest for 15 minutes before carving and serve.
