  • 1 leg of lamb (5-7 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1 tablespoon ground cinnamon
  • 1 tablespoon smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix garlic, cumin, coriander, cinnamon, paprika, cayenne, salt, pepper, olive oil, and lemon juice to form a marinade.
  3. Rub the marinade all over the leg of lamb, covering it completely. Let it marinate for at least 2 hours or overnight for best flavor.
  4. Place the lamb in a roasting pan and cover it with aluminum foil.
  5. Roast in the preheated oven for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium rare.
  6. Let it rest for 15 minutes before carving and serve.
