A simple recipe for making delicious Montreal-Style Bagels at home.

  • Total Time: 1 hour 40 minutes
  • Yield: 12 bagels 1x

Ingredients

Scale
  • 2 cups warm water (between 110°F and 115°F)
  • 1 tablespoon active dry yeast
  • 1 tablespoon sugar
  • 5 cups all-purpose flour
  • 1 tablespoon salt
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seeds (for garnish)
  • 1 tablespoon poppy seeds (for garnish)

Instructions

  1. Mix the warm water, yeast, and sugar in a small bowl and let it sit for about 5 minutes until frothy.
  2. In a large bowl, combine the flour and salt, then create a well in the center.
  3. Add the yeast mixture, honey, and vegetable oil to the well and stir until a dough forms.
  4. Transfer the dough to a floured surface and knead for approximately 10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.
  6. Preheat the oven to 425°F and bring a large pot of water to a boil, adding 1 tablespoon of honey.
  7. Punch down the risen dough and divide it into 12 equal portions.
  8. Roll each portion into a 10-inch long rope and shape it into a circle, pinching the ends together securely.
  9. Carefully drop the bagels into the boiling water, cooking for about 1 minute on each side.
  10. Remove the bagels with a slotted spoon and place them on a baking sheet lined with parchment paper.
  11. Sprinkle sesame seeds and poppy seeds generously over the top of each bagel.
  12. Bake in the preheated oven for 20-25 minutes or until golden brown.
  13. Allow the bagels to cool on a wire rack before enjoying.

Notes

  • For a sweeter flavor, add 1 tablespoon of cinnamon and 2 tablespoons of sugar to the dough.
  • For a savory variation, incorporate 1/2 cup of shredded cheese or fresh herbs before kneading.
