  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup chocolate chips
  • 1 cup candy eyeballs
  • 1/2 cup white chocolate chips (for drizzling)
  • Lollipop sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with non-stick spray or liners.
  2. In a large bowl, mix together the cocoa powder, granulated sugar, brown sugar, melted butter, and vanilla extract until well combined and smooth.
  3. Incorporate the eggs, adding them one at a time and ensuring each is fully mixed in before adding the next.
  4. In another bowl, combine the flour, salt, and baking powder, then slowly add this dry mix to the wet ingredients, stirring gently until just blended.
  5. Carefully fold in the chocolate chips to maintain their shape.
  6. Pour the brownie batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 10-12 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached.
  8. Allow the brownie bites to cool slightly before transferring them to a wire rack to cool completely.
  9. Once cool, insert a lollipop stick into each brownie bite, then place a candy eyeball on top.
  10. Melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth, and drizzle over the brownie pops for a ghoulish finish.
