Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with non-stick spray or liners.
- In a large bowl, mix together the cocoa powder, granulated sugar, brown sugar, melted butter, and vanilla extract until well combined and smooth.
- Incorporate the eggs, adding them one at a time and ensuring each is fully mixed in before adding the next.
- In another bowl, combine the flour, salt, and baking powder, then slowly add this dry mix to the wet ingredients, stirring gently until just blended.
- Carefully fold in the chocolate chips to maintain their shape.
- Pour the brownie batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 10-12 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached.
- Allow the brownie bites to cool slightly before transferring them to a wire rack to cool completely.
- Once cool, insert a lollipop stick into each brownie bite, then place a candy eyeball on top.
- Melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth, and drizzle over the brownie pops for a ghoulish finish.
