  • 2 tablespoons unsalted butter, softened

  • 1/4 teaspoon black pepper
  • 1 teaspoon sesame seeds

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix the miso paste, butter, olive oil, maple syrup, salt, and pepper until well combined.
  3. In a large bowl, toss the carrots with the miso butter mixture until evenly coated.
  4. Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  6. Remove from the oven and sprinkle with sesame seeds before serving.
