- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons miso paste
- 2 tablespoons unsalted butter, softened
- 1 tablespoon olive oil
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sesame seeds
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, mix the miso paste, butter, olive oil, maple syrup, salt, and pepper until well combined.
- In a large bowl, toss the carrots with the miso butter mixture until evenly coated.
- Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- Remove from the oven and sprinkle with sesame seeds before serving.
Notes
- For a spicier variation, add a pinch of chili flakes to the miso butter mixture.
- These carrots can be served as a side dish or over a bed of rice for a light meal.
