Deliciously fudgy chocolate brownies with a refreshing mint flavor, topped with a creamy mint frosting.

Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon mint extract
  • green food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large saucepan, melt the butter. Remove from heat, and stir in sugar, eggs, and vanilla.
  3. Beat in flour, cocoa, and salt until well blended.
  4. Spread the batter into the prepared pan.
  5. Bake for 20 to 25 minutes in the preheated oven. Do not overcook.
  6. In a bowl, blend powdered sugar, milk, mint extract, and food coloring until smooth.
  7. Spread the mint frosting over the cooled brownies.
  8. Cut into squares and serve.

Notes

  • For a richer flavor, add chocolate chips to the brownie batter.
  • Store brownies in an airtight container at room temperature.
