These delicious Mini Tomato and Mozzarella Tarts are perfect for summer gatherings or as a delightful appetizer.

Ingredients

  • 1 sheet puff pastry
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut into circles.
  3. Place the circles on a baking sheet lined with parchment paper.
  4. In a bowl, mix cherry tomatoes, mozzarella, basil, olive oil, balsamic vinegar, salt, and pepper.
  5. Spoon the mixture onto the pastry circles.
  6. Bake for 15-20 minutes or until the pastry is golden brown.
  7. Serve warm.
