Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a bowl, mix together glutinous rice flour, sugar, and baking powder.
  2. In another bowl, combine coconut milk, water, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until smooth.
  4. Heat vegetable oil in a deep pan over medium heat.
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown.
  6. Remove and drain on paper towels.
  7. Serve warm and enjoy!
