- 1 cup glutinous rice flour

- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/4 cup vegetable oil (for frying)
Instructions
- In a bowl, mix together glutinous rice flour, sugar, and baking powder.
- In another bowl, combine coconut milk, water, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until smooth.
- Heat vegetable oil in a deep pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown.
- Remove and drain on paper towels.
- Serve warm and enjoy!
Notes
- For a sweeter taste, dust with powdered sugar after frying.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
