Delicious gluten-free lemon treats that are perfect for any occasion.

Ingredients

  • 2 lemons, juiced and zested
  • 100g granulated sugar
  • 3 eggs
  • 100g almond flour
  • 50g butter, melted

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, whisk together the eggs and sugar until well combined.
  3. Add the lemon juice, zest, and melted butter, and mix well.
  4. Fold in the almond flour until you have a smooth batter.
  5. Pour the batter into a lined mini muffin tin.
  6. Bake for 15-20 minutes or until golden and a toothpick comes out clean.
  7. Let cool before serving.
