- 2 lemons, juiced and zested
- 100g granulated sugar
- 3 eggs
- 100g almond flour
- 50g butter, melted
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, whisk together the eggs and sugar until well combined.
- Add the lemon juice, zest, and melted butter, and mix well.
- Fold in the almond flour until you have a smooth batter.
- Pour the batter into a lined mini muffin tin.
- Bake for 15-20 minutes or until golden and a toothpick comes out clean.
- Let cool before serving.
