Delicious mini chicken quesadillas that make for a perfect snack or meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 4 small flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  1. In a bowl, mix the chicken, cheese, bell peppers, onion, and taco seasoning.
  2. Heat the olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet, add the chicken mixture, and top with another tortilla.
  4. Cook until the bottom is golden, then flip carefully to cook the other side.
  5. Repeat with remaining tortillas and filling.
  6. Slice into wedges and serve with sour cream and salsa.
