Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F and grease and flour four mini loaf pans.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. If using, fold in the chopped walnuts.
  5. Divide the batter evenly among the mini loaf pans.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. While the loaves are baking, prepare the glaze by combining the caramel sauce and sweetened condensed milk in a small saucepan over low heat. Stir until smooth and heated through.
  8. Once the loaves are done, allow them to cool in the pans for 10 minutes before transferring them to a wire rack.
  9. Drizzle the warm glaze over the cooled loaves and let it set for a few minutes before serving.
