Delightful mini pavlovas topped with fresh berries and whipped cream.

Ingredients

  • 4 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a bowl, whip egg whites until soft peaks form.
  3. Gradually add granulated sugar while continuing to whip until stiff peaks form.
  4. Fold in cornstarch and vinegar gently.
  5. Spoon meringue onto the prepared baking sheet in small circles.
  6. Bake for 1 hour or until crisp on the outside.
  7. Let cool completely.
  8. In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Top cooled pavlovas with whipped cream and mixed berries.
  10. Serve immediately and enjoy!
