- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup chopped walnuts
- 1/2 teaspoon cinnamon
- 1/4 cup honey
- 1/4 cup water
- 1/4 cup sugar (for syrup)
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press this mixture into the bottom of mini cheesecake pans.
- In another bowl, beat together the cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing until just combined.
- Fold in chopped walnuts and cinnamon.
- Pour the cheesecake mixture over the crust in the pans.
- Bake for 20-25 minutes until set. Allow to cool.
- In a saucepan, combine honey, water, and sugar to create a syrup. Bring to a boil, then reduce to simmer until thickened.
- Drizzle syrup over cooled cheesecakes before serving.
Notes
- Chill the cheesecakes in the refrigerator for a few hours for the best flavor.
- Can be topped with additional chopped nuts and honey before serving.
