These Mini Baklava Cheesecakes are a delightful twist on the classic dessert, combining the flavors of baklava with a creamy cheesecake filling.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon cinnamon
  • 1/4 cup honey
  • 1/4 cup water
  • 1/4 cup sugar (for syrup)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press this mixture into the bottom of mini cheesecake pans.
  3. In another bowl, beat together the cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing until just combined.
  5. Fold in chopped walnuts and cinnamon.
  6. Pour the cheesecake mixture over the crust in the pans.
  7. Bake for 20-25 minutes until set. Allow to cool.
  8. In a saucepan, combine honey, water, and sugar to create a syrup. Bring to a boil, then reduce to simmer until thickened.
  9. Drizzle syrup over cooled cheesecakes before serving.
