- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup chopped fresh cilantro
- 1/2 cup crumbled feta cheese
- 1 lime (juiced)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Add the baby potatoes to the bowl and toss until they are well coated with the oil and spices.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes or until the potatoes are golden brown and tender.
- Remove from oven and toss with lime juice, cilantro, and feta cheese before serving.
Notes
- For a spicier version, add diced jalapeños to the seasoning.
- These potatoes can be made ahead of time and reheated in the oven.
