- 2 cups long-grain white rice
- 4 cups water
- 1 cup pumpkin puree from a can
- 1 cup milk (dairy or plant-based)
- 1/2 cup sugar (to taste)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans (optional, for topping)
- Ice cubes (for serving)
Instructions
- Thoroughly rinse the rice under cold water until the water is clear.
- Blend the rinsed rice with 4 cups of water on high speed for 1-2 minutes until finely ground.
- Transfer the mixture to a large bowl or pitcher and let it sit at room temperature for a minimum of 3 hours, or overnight in the fridge.
- Strain the mixture through a fine mesh sieve or cheesecloth into another bowl or pitcher, discarding the solid rice.
- In the strained liquid, mix in the pumpkin puree, milk, sugar, vanilla, cinnamon, nutmeg, ginger, and salt, whisking until well incorporated.
- Chill the drink in the refrigerator for at least 30 minutes.
- When ready to serve, pour over ice and sprinkle with chopped pecans if desired.
Notes
- For a richer flavor, let the rice soak overnight.
- Adjust sugar according to your taste preference.
- Chopped pecans are optional but add a nice crunch.
