Ingredients

  • 2 cups long-grain white rice
  • 4 cups water
  • 1 cup pumpkin puree from a can
  • 1 cup milk (dairy or plant-based)
  • 1/2 cup sugar (to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional, for topping)
  • Ice cubes (for serving)

Instructions

  1. Thoroughly rinse the rice under cold water until the water is clear.
  2. Blend the rinsed rice with 4 cups of water on high speed for 1-2 minutes until finely ground.
  3. Transfer the mixture to a large bowl or pitcher and let it sit at room temperature for a minimum of 3 hours, or overnight in the fridge.
  4. Strain the mixture through a fine mesh sieve or cheesecloth into another bowl or pitcher, discarding the solid rice.
  5. In the strained liquid, mix in the pumpkin puree, milk, sugar, vanilla, cinnamon, nutmeg, ginger, and salt, whisking until well incorporated.
  6. Chill the drink in the refrigerator for at least 30 minutes.
  7. When ready to serve, pour over ice and sprinkle with chopped pecans if desired.

Notes

  • For a richer flavor, let the rice soak overnight.
  • Adjust sugar according to your taste preference.
  • Chopped pecans are optional but add a nice crunch.
