- 1 cup white beans, canned and drained
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 2 tablespoons matcha powder
- 1/2 teaspoon vanilla extract
- 1/2 cup oat flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a food processor, combine the white beans, almond butter, honey (or maple syrup), matcha powder, and vanilla extract until smooth.
- Add the oat flour, baking soda, and salt, and pulse until well combined.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool before slicing.
Notes
- Store leftovers in an airtight container for up to 5 days.
- These blondies can be frozen for up to 3 months.
