Delicious and healthy blondies made with matcha and white beans, offering a unique twist on traditional treats.

Ingredients

  • 1 cup white beans, canned and drained
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons matcha powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup oat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a food processor, combine the white beans, almond butter, honey (or maple syrup), matcha powder, and vanilla extract until smooth.
  3. Add the oat flour, baking soda, and salt, and pulse until well combined.
  4. Fold in the chocolate chips if using.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool before slicing.
