  • 1 cup smooth peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 1 cup all-purpose flour
  • 1 tablespoon matcha green tea powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
  2. In a spacious bowl, blend the peanut butter with both sugars until creamy and uniform.
  3. Incorporate the egg and vanilla essence into the peanut butter blend, stirring until well mixed.
  4. In another bowl, combine the flour, matcha powder, baking soda, and sea salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. If desired, gently mix in the dark chocolate chips.
  6. Pour the cookie batter into the prepared baking dish, spreading it out evenly.
  7. Bake in the preheated oven for 20-25 minutes, or until the edges are light golden brown and a toothpick inserted into the center comes out clean.
  8. Let the bars cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, slice into squares and enjoy!

Notes

  • For a nut-free alternative, replace peanut butter with sunflower seed butter.
