- 1 cup smooth peanut butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla essence
- 1 cup all-purpose flour
- 1 tablespoon matcha green tea powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
- In a spacious bowl, blend the peanut butter with both sugars until creamy and uniform.
- Incorporate the egg and vanilla essence into the peanut butter blend, stirring until well mixed.
- In another bowl, combine the flour, matcha powder, baking soda, and sea salt. Gradually fold this dry mixture into the wet ingredients until just combined.
- If desired, gently mix in the dark chocolate chips.
- Pour the cookie batter into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 20-25 minutes, or until the edges are light golden brown and a toothpick inserted into the center comes out clean.
- Let the bars cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
- Once cooled, slice into squares and enjoy!
Notes
- For a nut-free alternative, replace peanut butter with sunflower seed butter.
- Sprinkle a pinch of sea salt on top before baking to enhance the sweet and salty contrast.
