- 2 ripe bananas, mashed
- 1/4 cup coconut oil, melted
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flours, sugar, baking soda, baking powder, salt, and matcha powder.
- In another bowl, combine the mashed bananas, melted coconut oil, coconut milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the shredded coconut.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
