Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup coconut flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon matcha green tea powder
  • 2 ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flours, sugar, baking soda, baking powder, salt, and matcha powder.
  3. In another bowl, combine the mashed bananas, melted coconut oil, coconut milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the shredded coconut.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
