Instructions

  1. In a large bowl, whisk together the masa harina, sea salt, and baking powder until evenly combined.
  2. Pour in the olive oil and warm water, mixing with a spoon until a cohesive dough forms.
  3. Knead the dough on a lightly floured surface for about 2 minutes until it becomes smooth and elastic. Divide the dough into 8 equal portions.
  4. Heat oil in a deep frying pan over medium heat until shimmering.
  5. Shape each portion into a ball, then flatten each ball into a thin disc using a rolling pin or tortilla press.
  6. Fry the discs in the hot oil for approximately 30 seconds per side, or until they turn a lovely golden brown and become crispy. Remove them from the oil and let them drain on paper towels.
  7. Once the tortillas have cooled slightly, cut them into triangles to make chips. Fry the triangles in batches for about 2-3 minutes until they are perfectly crispy.
  8. Place the chips on paper towels to absorb excess oil and sprinkle with sea salt while they are still warm.
