  • 1 ripe mango, diced
  • 1 tablespoon crushed peanuts (optional, for garnish)
  • 1 tablespoon desiccated coconut (optional, for garnish)

Instructions

  1. Begin by rinsing the sweet glutinous rice under cold water until the water runs clear. Soak the rice in fresh water for a minimum of 4 hours, or ideally overnight, to achieve the best texture.
  2. After soaking, drain the rice and steam it in a bamboo or metal steamer lined with a clean cloth for about 30-35 minutes, until the rice is soft and sticky.
  3. While the rice is steaming, heat the coconut cream, brown sugar, and sea salt in a saucepan over medium heat. Stir gently until the sugar is fully dissolved, ensuring the mixture does not reach a boil. Remove from heat and set aside.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour approximately 1 cup of the coconut cream mixture over it. Mix thoroughly and allow it to sit for 30 minutes, letting the rice absorb the flavors.
  5. When the rice has cooled enough to handle, moisten your hands and take a small portion of the sticky rice. Flatten it in your palm, place a few pieces of diced mango in the center, and carefully mold the rice around the mango to create a ball. Continue this process until all the rice and mango is used.
  6. Roll each bliss ball in the remaining coconut cream mixture, then coat with crushed peanuts or desiccated coconut if desired.
  7. Arrange the bliss balls on a serving platter and chill in the refrigerator for at least 1 hour to allow them to firm up before enjoying.
