Ingredients

  • 2 ripe mangoes, peeled and chopped
  • 1 cup coconut cream
  • 1 tablespoon maple syrup
  • 1 teaspoon almond extract
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon flaky sea salt

Instructions

  1. In a high-speed blender, combine the chopped mangoes, coconut cream, maple syrup, almond extract, and lime juice. Blend until the mixture is velvety and smooth.
  2. Sample the blend and adjust the sweetness by incorporating more maple syrup if desired.
  3. Carefully pour the mango blend into popsicle molds, ensuring to leave a small gap at the top for expansion during freezing.
  4. Place the sticks into the molds and freeze for a minimum of 4-6 hours, or until they are completely solidified.
  5. For the spicy salt topping, mix the cayenne pepper and flaky sea salt in a small bowl and set aside.
  6. To easily remove the popsicles, run warm water over the molds for a few seconds.
  7. Before enjoying, generously sprinkle the spicy salt mixture over the popsicles for an exciting flavor contrast.
