- 2 ripe mangoes, peeled and chopped
- 1 cup coconut cream
- 1 tablespoon maple syrup
- 1 teaspoon almond extract
- 1 tablespoon fresh lime juice
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon flaky sea salt
Instructions
- In a high-speed blender, combine the chopped mangoes, coconut cream, maple syrup, almond extract, and lime juice. Blend until the mixture is velvety and smooth.
- Sample the blend and adjust the sweetness by incorporating more maple syrup if desired.
- Carefully pour the mango blend into popsicle molds, ensuring to leave a small gap at the top for expansion during freezing.
- Place the sticks into the molds and freeze for a minimum of 4-6 hours, or until they are completely solidified.
- For the spicy salt topping, mix the cayenne pepper and flaky sea salt in a small bowl and set aside.
- To easily remove the popsicles, run warm water over the molds for a few seconds.
- Before enjoying, generously sprinkle the spicy salt mixture over the popsicles for an exciting flavor contrast.
Notes
- For an extra creamy treat, replace half of the coconut cream with full-fat yogurt.
- Add a handful of fresh basil leaves to the blender for a unique herbal note.
