- 1 ripe avocado, sliced
- 1 package rice paper wrappers
- 1 cup fresh mint leaves
- 1 cup shredded carrots
- 1 tablespoon sesame seeds (optional)
Instructions
- Soak the rice paper wrappers in warm water until soft.
- Place the mango, avocado, mint, and carrots on the rice paper.
- Wrap tightly, folding in the sides as you roll.
- Repeat with remaining ingredients.
- For the drizzle, mix lime juice, chili flakes, and a pinch of salt in a bowl.
- Serve the spring rolls with the chili lime drizzle on the side.
Notes
- For a spicy kick, add sliced jalapeños in the rolls.
- These spring rolls are best eaten fresh.
