Refreshing mango and avocado spring rolls served with a zesty chili lime drizzle.

Ingredients

  • 1 ripe mango, sliced
  • 1 ripe avocado, sliced
  • 1 package rice paper wrappers
  • 1 cup fresh mint leaves
  • 1 cup shredded carrots
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Soak the rice paper wrappers in warm water until soft.
  2. Place the mango, avocado, mint, and carrots on the rice paper.
  3. Wrap tightly, folding in the sides as you roll.
  4. Repeat with remaining ingredients.
  5. For the drizzle, mix lime juice, chili flakes, and a pinch of salt in a bowl.
  6. Serve the spring rolls with the chili lime drizzle on the side.

Notes

  • For a spicy kick, add sliced jalapeños in the rolls.
