Ingredients

  • 2 cups jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons oil
  • 2 tablespoons sambal oelek
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the jasmine rice, coconut milk, water, salt, and sugar. Stir to combine.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender.
  4. In a small bowl, mix the sambal oelek and lime juice.
  5. Once the rice is cooked, fluff with a fork and stir in the chopped cilantro.
  6. Serve the rice with sambal on the side.
