- 2 cups jasmine rice
- 1 can (14 oz) coconut milk
- 1 1/2 cups water
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons oil
- 2 tablespoons sambal oelek
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the jasmine rice, coconut milk, water, salt, and sugar. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender.
- In a small bowl, mix the sambal oelek and lime juice.
- Once the rice is cooked, fluff with a fork and stir in the chopped cilantro.
- Serve the rice with sambal on the side.

- Adjust the amount of sambal according to your spice preference.
- Let the rice sit covered for a few minutes after cooking for best texture.
