Mafroukeh aux pistaches is a delicious Middle Eastern dessert made with semolina and topped with crunchy pistachios.

Ingredients

  • 1 cup semolina
  • 1/2 cup sugar
  • 2 cups milk
  • 1/4 cup water
  • 1/4 cup unsalted butter
  • 1/2 cup crushed pistachios
  • 1 tsp vanilla extract
  • 1/2 tsp ground cardamom

Instructions

  1. In a saucepan, melt the butter over medium heat.
  2. Add the semolina and stir until lightly toasted.
  3. In another pot, combine milk, water, sugar, vanilla, and cardamom and heat until sugar dissolves.
  4. Gradually add the milk mixture to the toasted semolina, stirring constantly until thickened.
  5. Pour the mixture into a greased dish and smooth the top.
  6. Sprinkle crushed pistachios on top.
  7. Allow to cool and set before slicing into squares.

Notes

  • For a richer flavor, use whole milk instead of skim.
  • Top with extra pistachios or a drizzle of honey for serving.
