Ingredients

- 1 cup semolina
- 1/2 cup sugar
- 2 cups milk
- 1/4 cup water
- 1/4 cup unsalted butter
- 1/2 cup crushed pistachios
- 1 tsp vanilla extract
- 1/2 tsp ground cardamom
Instructions
- In a saucepan, melt the butter over medium heat.
- Add the semolina and stir until lightly toasted.
- In another pot, combine milk, water, sugar, vanilla, and cardamom and heat until sugar dissolves.
- Gradually add the milk mixture to the toasted semolina, stirring constantly until thickened.
- Pour the mixture into a greased dish and smooth the top.
- Sprinkle crushed pistachios on top.
- Allow to cool and set before slicing into squares.
Notes
- For a richer flavor, use whole milk instead of skim.
- Top with extra pistachios or a drizzle of honey for serving.
