- 2 cups fresh strawberries, pureed
- 1/2 cup heavy cream
- 1/2 cup cream cheese, softened
- 1/2 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder (for crust)
- 1/2 cup almond flour (for crust)
- 1/4 cup butter, melted (for crust)
Instructions
- In a bowl, combine almond flour and cocoa powder with melted butter to form the crust. Press the mixture into the bottom of a pie dish.
- In a separate bowl, whip the cream until stiff peaks form.
- In another bowl, mix the softened cream cheese and powdered erythritol until smooth.
- Fold the strawberry puree and whipped cream into the cream cheese mixture until well combined.
- Pour the mousse over the prepared crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Serve chilled, garnished with fresh strawberries if desired.
Notes
- For a chocolate version, add unsweetened cocoa powder to the mousse mixture.
- Ensure the cream cheese is fully softened to avoid lumps.
- You can use other berries instead of strawberries for a different flavor.
